15-Minute Healthy Chicken Quesadilla

This quesadilla is an amazing lunch both nutritionally and taste-wise. It comes together so easily and quickly but it tastes like a high-effort meal. My favorite part is the garlicy herb sauce.

Ingredients

For the sauce
2 Tbspgreek yogurt
2 tsptahini
1 bunchfresh cilantro
1 bunchfresh parsley
2cloves of garlic
salt
to taste
black pepper
to taste
0.5lime
juiced
For The Quesadilla
Instructions
Step 1
To make the chicken, butterfly it (cut through the middle and open it like a book) and season with your spices of choice, on both sides.
Step 2
Cook the chicken on a medium heat pan for 3-4 minutes on each side. Slice it into bite-sized pieces when it's done.
Step 3
To make the sauce, simply combine all the ingredients listed in a blender, and blend until incorportated.
Step 4
Make the quesadilla by stacking the ingredients on one side of each tortilla in this order: salted tomato slices, chicken, sauce, sliced cheese.
Fold the empty half over the other one on each tortilla.
Step 5
Fry the quesadillas in the pan for 2 minutes/side, or until golden brown.

Love all the flavors, I didn't add the tahini and it still tasted good. Added avocado for extra flavor.
