I keep playing with other recipes and tweaking to my liking. The goal for me is affordable, few ingredients, and then me required.

Ingredients

½ cupalmond flour
⅛ cupcoconut flour
0.5 Tbsbaking powder
1egg
large
1 scoopVanilla Cupcake powder
Fast
1 cupunsweetened almond milk
Instructions
Step 1
Combine dry ingredients, add egg, mix in almond milk. Let sit for 5 minutes. Plug in Waffle iron and/heat up skillet. Spray/oil well. Batter will be thick. So will need smashed out for pancakes. I use the high setting on my waffle iron. And low/medium heat for pancakes. Don’t be tempted to add more milk/water to batter as they will be wet instead of airy, unless you like that. This mix makes 3 good sized waffles/pancakes. I haven’t done the nutrition calculations yet
