Instructions
For batter
Step 1
Add pancake mix, ricotta, sugar, vanilla, melted butter and lemon zest to large bowl

Add milk and whisk together
Step 3
Heat waffle iron
Step 4
Spray with nonstick spray and paddle batter onto waffle iron
Step 5
Top with 1/2 the blueberries and close waffle iron, cook till golden brown
Step 6
Place on plate and top with remaining blueberries and maple syrup (you can also zest more lemon for extra zing)
Step 7
Sprinkle with powdered sugar and enjoy!
