Instructions
Step 1
Put saffron in small bowl, add a bit of warm water, let sit until ready to add to dish

Cook bacon in large pot until almost cooked, take out and put in a bowl (separate to step 1)

Add large amount of olive oil to pot, enough to cover the bottom generously, put in rice and cook while stirring for a few minutes on low heat

Add all ingredients to pot, turn up the heat, stir until it starts to boil

Turn down to a simmer, and cook for about 25min without lid, without stirring at all

Get bit of rice from edge of dish to see if done, should be chewy not hard, and liquid should be absorbed
