Instructions

Step 1
To a bowl add 1 chopped bell pepper, 1/4 chopped red onion, 1/2 pint chopped grape tomatoes, 1 cup chopped spinach, 2 chopped Persian cucumbers, 1 stalk of green onion & 1 can of chickpeas
Step 2
Next we are going to make the dressing. In a blender or food processor add the below ingredients and blend well. 1/4 cup coconut milk 2tbs olive oil 2 small avocados 1 handful fresh basil 1 handful fresh parsley A stalk of green onion Juice of 1/2 lemon 1/4 tsp salt 1 heaping tbs of minced garlic
Step 3
If you like the sauce a little thinner you can add a tbs or so of water to thin it out! I personally like it a bit thicker.
Step 4
Pour the sauce over all the chopped veggies and chickpeas and enjoy! Easy as that!!
