Loaded chorizo and black bean sweet potatoes nachos.
Added extra ingredients to make it big enough for 4 for dinner (2 adults 2 kids) and 2x lunch the next day.

Instructions
Step 1

Thinly slice the sweet potatoes and lay on a baking tray. Season with salt, pepper, smoked paprika and cajun spice. Add a little oil and pop in the oven for 15 minutes.

Chop the rest
Step 3

Take the sweet potatoes out and layer with cheese, Peppers, onion, chorizo, black beans and sweetcorn. Make sure a nice layer of cheese to the top.
Step 4
Cook for a further 15/20 minutes.
Step 5

Serve with sour cream and smashed avocado.
