Waffle Iron Chicken Quesadillas

Ingredients
4 servings

2avocados
peeled and chopped

2 tablespoonsred onion
chopped

2 tablespoonsfresh lime juice

2 tablespoonsdiced tomato

5 teaspoonsfresh cilantro
chopped, divided
¼ teaspoonfresh kosher salt

cooking spray

8whole wheat tortillas
7 inch, or grain free

1 packageMexican cheese blend

6 ozskinless chicken breast
shredded cooked, divided

salsa

Instructions
Step 1
1. Using a fork, mash the avocados in a medium bowl until chunky
Step 2
2. Add onion, lime juice, tomato, one tablespoon cilantro and salt and mash to desired consistency. Set aside
Step 3
3. Preheat waffle iron to high. Coat interior with cooking spray. Place one tortilla on the waffle iron. Mound 1/3 cup of cheese in the center and spread evenly leaving a ½ inch border. Add 1 1/2 oz chicken and 1/2 teaspoon cilantro. Place a second tortilla over the filling and close the waffle iron. Cook until the quesadillas golden brown and heated through, two to three minutes.

4. Remove quesadilla from waffle iron, repeat three times with remaining tortillas, cheese, chicken and cilantro
Step 5
5. Cut into wedges, garnish with cilantro, guacamole, salsa and sour cream
