Couscous-coated Salmon

Try a new way with salmon with this budget-friendly recipe from The Savvy Shopper's Cookbook. Spicy couscous gives a delicious crunch to this roasted tray-bake salmon. This salmon dish makes a great dinner or lunch and is quick to prepare when you have unexpected guests. Spicy couscous is full of flavour and yet won't overpower the fish. Covering the salmon in couscous traps in the fish's juices and keeps it lovely and moist in the oven. This goes really well with boiled new potatoes and vegetables, or just a simple salad.
