Instructions
Step 1
In a small bowl, combine the vinegar, 1 tablespoon of oil, the mustard, garlic, and red pepper flakes. Whisk until fully combined, and set aside

In a large skillet over medium heat, add the remaining tablespoon of oil
Step 3
Thoroughly season the chicken thighs qith salt and black pepper, and add them to the skillet, searing each side for 3 minutes or until golden
Step 4
Remove the chicken from the skillet, and set on a plate
Step 5
Next, add the asparagus and tomatoes to the same skillet, season with more salt and pepper to taste, and cook for about 5 minutes, until the asparagus os bright green and the tomatoes are slightly wilted
Step 6
Move the vegetables to one side of the skillet, and return the chicken to the skillet
Step 7
Pour the balsamic mixture over the chicken and vegetables
Step 8
Toss everything together, and cook about 5 minutes more, until the chicken isnfully cooked through and the vinaigrette has thickened
