Ingredients
4 servings

4 cupswatermelon
chopped into teeny tiny cubes

1 cupsfennel
whites and stems finely chopped

4garlic cloves
minced

½ cupmint
finely chopped

¼ cupitalian parsley
finely chopped

6thai chilies
finely chopped

¼ cuplime
juice 2 limes

3 Tbspfish sauce

2 Tbspolive oil

1 Tbspground aleppo pepper

white pepper
cracked

kosher salt
Instructions
Step 1
In a large bowl combine watermelon, fennel, garlic, mint, parsley, chilies, aleppo pepper, lime juice, fish sauce, white pepper and olive oil. Mix together well and add salt to taste.
Step 2
Serve on a toasted baguette or something of that nature. Garnish with mint, parsley and finishing salt.
