For the dressing
3garlic
cloves, finely chopped
1 TbspDijon
2juice of lemons
2 Tbspevoo
honey
to taste
salt
to taste
pepper
to taste
For the salad
1/2 cup strawberries, cut in half
Instructions
For the dressing
Step 1
Add the finely chopped garlic, dijon mustard and lemon juice to a cup or small bowl.
Step 2
Add an equal amount of evoo (approximately 2 Tbsp).
Step 3
Add in honey, salt, and pepper to taste and whisk together.
For the Salad
Step 4
In a large bowl, massage the kale for 2 minutes, then add some of the dressing and massage for another 1-2 minutes.
Step 5
Add peaches, strawberries, shallot, almonds, and toss together.
Step 6
Grill your chicken breast to taste, chop up into bite sized pieces, and add to the salad.
Step 7
Add goats cheese, dressing to taste, toss again and serve
