Lime vinaigrette:
Instructions
Step 1
Season chicken with salt and pepper. In a bowl, combine paprika and lime juice.
Step 2
Add chicken and let it marinate in the refrigerator for at least 30 minutes to overnight.
Step 3
Heat the grill to medium and grease lightly.
Step 4
Grill chicken until done and let’s rest.
Step 5
In a serving bowl, add avocado, tomato, red onion, and spring mix
Step 6
Whisk together vinaigrette ingredients in a small bowl.
Step 7
Slice chicken, and topped the salad with the chicken, peaches, and vinaigrette.
