Instructions

Step 1
Lightly season the flour with salt and pepper. Toss the beef in the flour and cayenne pepper until lightly coated.
Step 2
Heat 1 tablespoon of the oil in a large frying pan and fry the beef in batches until browned, adding more oil as needed.
Step 3
Whisk together the lemon rind, ginger, mirin, tamari, rice wine and sugar in a small bowl.
Step 4
Add the beef to the cooker. Gently pour over the sauce and then add the stock.
Step 5
Set the cooker to high and cook for 5 hours until beef is tender.
Step 6
Season to taste and serve with noodles. Garnish with the spring onions and coriander, if using.
