Chicken Taco Kolaches

Instructions

Chicken Taco Seasoning

Step 1
Combine all seasoning ingredients and stir well.

For the Chicken

Step 2
Coat chicken breast with Chicken Taco Seasoning. (Leave some seasoning for the pressure cooker broth.)
Step 3
Pour EVOO in the instant pot/pressure cooker.
Step 4
Set the instant pot to Saute on high and allow time to get hot.
Step 5
Place chicken breast in the instant pot and sear both sides.
Step 6
Remove chicken breast. Pour water into instant pot to deglaze the bottom of the pot (so it doesn't give a burn warning).
Step 7
Pour 1-2 Tbsp of the Chicken Taco Seasoning into the water, place the trivet in the pot then the chicken breast on the trivet.
Step 8
Place the lid on the pot, make sure it's set to "seal", set the instant pot to pressure cook on high for 11 minutes.
Step 9
Allow the instant pot to vent naturally for 3 minutes, then quick vent any remaining pressure.
Step 10
Shred the chicken into smaller pieces. (I used a small electric chopper.)

For the Kolaches

Step 11
Preheat oven to 350°. Open the can of biscuits and roll each out to approximately a 5" thin round.
Step 12
Cut eight 1/2" cubes of the block cheese and place one in each biscuit round.
Step 13
Add 1 Tbsp shredded chicken and 1 Tbsp salsa to each biscuit round.
Step 14
Fold the biscuit over the filling and pinch the top fully closed.
Step 15
Place the biscuit seam down on a parchment paper lined baking sheet.
Step 16
Brush with melted butter and top each with shredded cheese.
Step 17
Bake for 12 minutes or until top is golden brown.
Step 18
Remove from oven, brush each again with butter and sprinkle bagel seasoning on top.
