Instructions

Step 1
Pound your chicken breast to be an even thickness.
Step 2
Marinate the chicken overnight in the pineapple juice and jerk seasoning.
Step 3
Start cooking the rice.
Step 4
In a bowl, mix together the pineapple chuncks, black beans, corn, diced red onion, salt, red pepper flakes, and lime juice to make a salsa.
Step 5
On a grill or in a skillet with a small amount of cooking oil, cook the chicken.
Step 6
Cut the chicken into straps and serve on top of the rice with the salsa on top.
