Step 1
In a large pot over medium heat, melt half the butter. Add onion, kale, cabbage and garlic. Drizzle with olive oil. Saute until onions are carmelized.
Step 2
In a large bowl, combine potato flakes, remaining butter and salt with boiling water. Stir until smooth but lumpy. Slowly incorporate buttermilk.
Step 3
Add your kale mixture to the potatoes, stir until combined.
Step 4
Serve hot with an extra knob of butter in the middle, if desired.
