Squid Stew with Spinach and Chilli

Instructions

Step 1
Over low heat, fry onion, garlic and chili in oil until soft. Season.
Step 2
Add squid, up heat to medium and cook for 10 mins until squid is white. Stir often.
Step 3
Add wine, bring to boil, reduce heat to low and simmer for 5-7 mins.
Step 4
Mash tomatoes in bowl with hands or masher. Add to pan with spinach and water.
Step 5
Bring to boil. Turn heat down and simmer for 1 to 1 and a half hours or until squid is soft and tender. Check seasoning.
Step 6
Serve with crusty bread or toasted bread.
