Instructions

Step 1
Melt butter in a large saucepan over MED heat.
Step 2
Sprinkle in flour and whisk to combine.
Step 3
Cook for approximately 1 minute, whisking often.
Step 4
Slowly pour in about 2 cups or so of the milk, while whisking constantly, until smooth.
Step 5
Slowly pour in the remaining milk, while whisking constantly, until combined and smooth.
Step 6
Add salt and pepper.
Step 7
Continue to heat over MED heat, whisking very often, until thickened to a very thick consistency. It should almost be the consistency of a semi thinned out condensed soup.
Step 8
Add Velveeta to the sauce and stir until completely melted and smooth.
Step 9
Cook pasta, as per directions, and drain. Combine cooked/drained pasta with the cheese sauce, stirring to combine fully.
Step 10
Put the mixture into large baking pan and bake at 350° for 10 minutes.
Step 11
Mix the crushed Ritz crackers with the shredded cheese. Put the topping onto the mac and cheese and bake for another 5 minutes.
