Step 1
In a microwave safe bowl, cut into small chunks all of your butter. Separately, chop up your chocolate into fine pieces. Microwave your butter until it is all completely melted and to that, add your chocolate chunks. Use the residual heat of the butter to melt the chocolate. If your mix is still looking a bit lumpy, use 10 second bursts in the microwave, stirring in between to get it to the right consistency
Step 2
In a separate bowl, whisk together your eggs and sugar until it is nice and light and frothy. You should see some bubbles on the surface. Now pour in your cooled, melted chocolate mixture and optionally you can add 1/3 cup of brewed espresso for a more intense chocolate flavour.
Step 3
Lastly, sift in your dry ingredients - cocoa, flour and salt and fold to combine. The mixture should be looking thick and chocolatey but loose enough to pour.
Step 4
If you want to add any add-ins, such as walnuts, chocolate chunks etc. now is when you can do so. Pour into a well buttered and parchment lined tray.
Step 5
Bake in an 180 degree oven for upto 15-20 minutes. The brownies will be done when the outside border is completely set and the top is a shiny, even color. You can test the middle with a toothpick but it will come out with brownie residue on it (thats normal!)

Let brownies completely cool before cutting into them! Enjoy!
