Green Island Salad

A zingy island salad with crispy grilled plantains and sweet bananas on a bed of mango, cucumber and watercress salad. It's sweet, sour, crunchy, warm and cold together and is a combination you want to enjoy!

Instructions

Step 1
Boil the green bananas in their skin for about 10 minutes.
Step 2
Drain, peel and set aside.
Step 3
Pick the watercress, discarding woody stems.
Step 4
Peel and dice the cucumber and cut the firm mango into pieces and place in a bowl.
Step 5
Remove skin from ripe bananas.
Step 6
Cut the cooked green bananas and the ripe bananas into slices and grill. (Note: ripe bananas will only take 5 minutes, the green about 10-15 minutes.)
Step 7
When cooked set aside and allow to cool.
Step 8
For the dressing, squeeze the juice of the lemons into a bowl, making sure there are no pips or pith remaining.
Step 9
Mix juice with the oil and sugar until completely dissolved.
Step 10
Mix all the greens and fruit, except the grilled bananas, in a large bowl with the dressing.
Step 11
Lie the grilled bananas on top to serve.
