Instructions
Step 1
Slice leeks and garlic. Place in a large pan with thyme, butter, and 1tbsp of oil over medium heat.
Step 2
Stir in leeks and 1 2/3c of water once it's sizzling.
Step 3
Cover and simmer on low for 40mins. Season with salt and pepper
Step 4
When leeks are almost done, cook the pasta. Drain, but save 1c of that starchy good good water. Toss pasta and leeks. Remove from heat.
Step 5
Grate the parm and stir with the egg. Add some of the pasta water.
Step 6
Pour that mix over the pasta and leeks. Toss vigorously.
Step 7
Adjust consistency with more pasta water if needed.
