Step 1
In a bowl, add milk, water, olive oil, dry yeast, sugar and whisk everything together.
Step 2
Incorporate flour little by little, add salt and knead for about 8/10 mins.
Step 3
Cover with a clean towel and proof for at least 30 mins (if you have time, I suggest letting it proof up to 1 hour).
Step 4
Divide your dough into pieces of 90g each.
Step 5
Roll out each piece into a flat disk, fill it with mozzarella (if you want really cheesy absolutely pack it but if you don't just add a little) and close it into a ball.
Step 6
With a rolling pin, gently flatter each ball into a disk and set aside.
Step 7
Cook your cheesy focaccias in a pan over medium-low heat for about 5 mins each side (make sure you cover your pan with a lid for best result).
