Step 1
Rice paper wrappers come in a variety of sizes but look for the ones that have a diameter between 8-9 inches.
Step 2
Peel whole carrots and make thin strips using your knife. Alternatively use a box grater or hand-held shredder.
Step 3
Seed the cucumber and cut into thin strips.
Step 4
Remove the root end of the scallions and slice thinly
Step 5
Cook rice noodles in boiling water according to instructions on the package, drain, rinse in cold water until chilled, drain well, store in a bowl until ready to use mixing in a tiny splash of vegetable oil to make sure the noodles stay seperate
