Ingredients

1 bunchfresh kale
ribs removed, leaves thinly sliced
3 tablespoonsfresh lemon juice
1 tablespoonolive oil
½ teaspoonsalt
1 tablespoonwhite balsamic vinegar
or white wine
1 tablespoonhoney
½ teaspoonpepper
2 tablespoonsdried tart cherries
2 tablespoonswalnuts
chopped, toasted if desired
2 tablespoonsblue cheese
crumbled
Instructions
Step 1
In large bowl, mix kale, lemon juice, 1 teaspoon of the oil and the salt.
Step 2
Massage kale with your hands 3 to 5 minutes or until it starts to wilt; set aside.
Step 3
In small bowl, beat vinegar, honey and pepper with whisk.
Step 4
Slowly pour in remaining 2 teaspoons oil while continuing to beat.
Step 5
Pour dressing over kale mixture; toss to codi
