Step 1
Put the greens (and fennel) on the serving plate and drizzle with a vinaigrette. You can use your favorite - I like to use apple vinegar, olive oil, salt and pepper. Mix gently and form a small hole in the middle.
Step 2
Place halved (or quartered) cherry tomatoes in the created hole and sprinkle a pinch of salt over them.
Step 3
Shave some good quality parmigiano reggiano on top of the salad.
Step 4
Slightly rost pinenuts over the medium-high heat, constantly stiring. Sprinkle on top.
Step 5
Adjust the amounts of the ingredients to your linking and enjoy!
