Step 1
Cut meat into 6 big chunks
Step 2
In a food processor, finely chop onions, carrots, celery and garlic.
Step 3
Add butter and olive oil to a large pot at medium-high heat. Saute meat with salt and pepper until slightly brown.
Step 4
Add all vegetables to the pot and saute until onions are translucent.
Step 5
Add wine and let the alcohol evaporate. Add water and herbs, boil for 2 hrs or until meat is tender.
Step 6
Separate meat from broth. Remove herbs and blend all veggies and broth to make gravy.
Step 7
Shred the meat, and serve with gravy
