Instructions
Step 1
Put all of the ingredients in a pot EXCEPT the chicken. Taste for flavor balance; adjust vinegar and soy sauce. (Keep in mind that the water will reduce and the sauce will get saltier.)
Step 2
Add the chicken then put over a medium-high heat to bring the adobo to a boil. Adjust the heat to maintain a gentle simmer.
Step 3
Braise for at least 1 hr or until chicken falls off the bone and is no longer pink inside. Remove bay leaves and serve.
