300 Gramlean beef strips
2.5mlextra virgin olive oil
60 Gramvermicelli rice noodles
uncooked
40 Grammixed lettuce leaves
120 Gramcucumber
sliced
120 Gramcherry tomatoes
halved
40 Gramred onion
sliced
10 Gramcoriander
chopped
10 Grammint
chopped
15 Gramunsalted peanuts
crushed

1garlic clove
minced
5 Gramred chilli
deseeded, finely chopped
20mlreduced salt soy sauce
2.5mlsesame oil
5mlmaple syrup
30mllime juice

Instructions
Step 1
Fill a heatproof bowl with boiling water. Place rice noodles in a bowl, cover and leave for three minutes. Drain and set aside
Step 2
Heat olive oil in a pan over high heat. Add beef strips to pan and cook, stirring occasionally for four-five minutes
Step 3
In a mixing bowl add vermicelli noodles, lettuce leaves, cucumber, cherry tomatoes, coriander and mint. Mix well, then split between two bowls
Step 4
In a small jar add all dressing ingredients and shake to combine
Step 5
Top each bowl with half the beef strips, dressing and crushed peanuts
Step 6
Serve one now and refrigerate one for tomorrow
