Ingredients
6 servings
1kgMutton shoulder
Curry Pieces
2russet potatoes
1onion
large, sliced
3Roma tomatoes
grated
4 TblKashmiri masala
1 tspCumin powder
Jeera
1 tspdhania powder
coriander
1 tsptumeric powder
2cinnamon sticks
2bay leaf
1 TblFennel seeds
soomph
3cloves
3green cardamom
elachi
1black cardamom
elachi
1star anise
salt
to taste
1 sprigcurry leaves
2Green chillies
split lengthways thru middle
1 tspGinger paste
1 tspgarlic paste
Instructions
Step 1
Heat oil add whole spices, seeds, green chillies, add onions cook til translucent /lightly Brown
Step 2
Add ginger garlic
Step 3
Add masala and powders
Step 4
Stir well
Step 5
Add tomato and cook for a few min on medium add splash of water if necessary to avoid burning.
Step 6
Add meat and rough salt
Step 7
Cook for 30 / 40 minutes or until meat starts to soften.
Step 8
Add potatoes add 1 cup or so water cook further 30 minutes until potatoes are busting open. If in SA use UTD potatoes if in North America I use Russet potatoes because we don’t get Up-To-Date potatoes.
Step 9
Garnish with fresh Dhania/ coriander / cilantro.
