Instructions

Step 1
Cook pasta in salted water for the recommended amount of time on the package, drain and let cool on a sheet pan spread out to give it plenty of air for cooling (do not rinse, reserve pasty water for cooking pasta). In a hot sauce pan, add olive oil, garlic, chopped anchovy, crushed red pepper flakes. using a colander dip cooked pasta into the hot pasta water before straining it, then dropping it into the pan, saute over hight heat, adding pasta water, cheese, salt, pepper and parsley until the the pasta reaches a nice loose, saucy texture. Plate up and serve hot.
