Instructions

Step 1
Blend together in food processor 1 ½ cup Carbquik and 3 Tblsp Vital Wheat Gluten. Set aside between ¼ and ½ cup for dusting
Step 2
Blend in 1 Tblsp Bread Flour and ½ tsp salt
Step 3
Lightly beat egg and add to flour mixture while blending
Step 4
Add oil
Step 5
Blend until pebbly – Do not get it too moist
Step 6
Work it into a ball on a cutting board it will be pretty stiff About 1 – 2 minutes

7. Cover and let it rest for 15-20 minutes
Step 8
Knead for 5 more minutes. Wet hands 2-3 times to keep dough moist but not too moist. Kneading activates the Vital Wheat gluten and adds elasticity to the dough. It should bounce back slightly
Step 9
Reform the dough into a ball. Cover and let it rest another 15 minutes
Step 10
Cut the ball into smaller pieces and roll each piece into a ball. Knead each piece several times to form a smooth ball.
Step 11
Roll each ball in the flour you set aside to keep it from sticking to the pasta maker, extruder or cutting board while making the noodles
Step 12
Coat with flour once cut into desired noodle shapes
Step 13
Refrigerate 4-8 hours (up to 12 hours)
Step 14
Bring water, oil and salt to a gentle boil
Step 15
Drop noodles carefully into gently boiling water
Step 16
Bring back to a gentle boil and cook for 3 minutes. Do NOT overcook
Step 17
Dip out carefully – do not use a colander
Step 18
Place noodles directly in sauce
