Okonomiyaki is a traditional Japanese cabbage pancake served with Tonkatsu sauce - a mixture of miso paste, sesame paste, and mirin. This savory pancake is loaded with nutrient-dense cabbage, an often misunderstood vegetable. Cabbage is affordable, highly nutritious and extremely delicious - especially in this pancake. Instructions

Step 1
Make batter: mix together flour, water, salt, baking powder and eggs until well combined.
Step 2
Remove the core of the cabbage and compost (or save for cooking later). Chop cabbage in 1 inch cubes and sort out any extra thick cabbage pieces (these pieces are too thick to use in this recipe - save for a stir fry later in the week).
Step 3
Add cabbage to batter and mix thoroughly.
Step 4
Heat a fry pan to medium heat with a drizzle of oil and pour roughly 3/4 cup of batter into pan. Let cook for 5 minutes, flip and cook for 3 minutes and flip one last time and cook for a final 2 minutes.
Step 5
While pancake cooks, assemble side salads by adding mixed greens to bowls and topping with sliced bell peppers, sprouts and chopped scallion. (Or use any veggies you have on hand)
Step 6
While last pancake is cooking, combine miso paste, tahini, sake or rice vinegar and mirin to a small sauce pot and bring to a gentle simmer. Use a whisk to thoroughly combine and remove from heat.
Step 7
Serve okonomiyaki topped with tonkatsu sauce and a side salad - enjoy!
