Ingredients

1Yellow Onion
Medium, Small Dice
3 RibsCelery
Small Dice
6cloves garlic

4 TbspUnsalted Butter
for Aromatics
2 x 8.5 ozCornbread Mix

large, room temperature
1 CupHeavy Whipping Cream
room temperature
1 StickUnsalted Butter
Melted
¼ cupgranulated sugar
Fine Sea Salt
To Taste

Rubbed Sage
To Taste
0.25 CupChicken Stock
Check Consistency of dressing
12 ozfresh cranberries
0.25 CupOrange Juice
for cranberry sauce
1 TbspOrange Zest
for cranberry sauce
¼ cupBrown Sugar
for cranberry sauce
0.25 CupGranulated sugar
for cranberry sauce
1 tspground cinnamon
for cranberry sauce
0.25 CupAromatics
Sautéed, for gravy
3 TbspUnsalted Butter
for gravy
1 cupchicken stock
for gravy
Sugar
for gravy
Vinegar
for gravy
Instructions
Step 1
Sauté aromatics with butter in a large pan on medium heat until soft. Season with Sea Salt, Black Pepper and Sage. We don’t need color here, just succulent vegetables. Set aside
Step 2
Preheat oven to 400 degrees. Mix together Eggs, Heavy Cream, Butter & Sugar. Add to sifted Cornbread Mix. Pour into a greased 9 inch cake pan, and bake for 25-30 minutes or until golden brown. Let cool
Step 3
Break up Cornbread to desired texture and add 3/4 of the sautéed aromatics. Mix together with 1/4 of Chicken stock at a time. Here you want to make sure it’s moist enough, but not soggy. Have a light hand here.. because once you add it, you can’t take it out. Mix it then taste it. If it feels right you’re good. Season to taste with Sea Salt, Black Pepper and Sage.
Step 4
Spoon dressing mixture back into the same cake pan. Bake on 375 degrees (uncovered) for 20-25 minutes. The top should be a light golden brown. You can bump up the heat to 400 if you want a little more color.
Step 5
In a medium sauce pot, add the Cranberries, Sugars, Orange Juice & Zest. Cook on medium heat until the berries burst and reach the desired consistency. Cranberries have some bitter notes, so they made need a bit more sugar. Always taste.. Let cool and set aside
Step 6
For the Gravy. Take the last 1/4 of sautéed aromatics and cook them with flour and butter on medium heat. Here you’re creating the roux to thicken the gravy. A little color here is fine, but not a deep brown. You really just want to cook out the raw edge of the flour. Stir in the Chicken Stock and continue cooking until it thickens. More stock may be needed. Add a splash at a time as it comes back up to a simmer. Season to taste with Sea Salt, Black Pepper and Sage. Finish with a small pinch of Sugar & just a splash of Vinegar.
Step 7
Spoon the Dressing on plates. Cover with Gravy and top with Cranberry Sauce. Please Enjoy the Fruits of Your Labor 🤘🏾
