Pan fried pork with apple and leek
A scrumptious filling pork dish. Serve with either rice or mash

Instructions
Step 1
Season the pork on both side with salt and pepper. Heat the oil in a nonstick frying pan over a medium heat and fry for 3-4 minutes on each side until lightly browned and cooked through. Transfer to a warmed plate.
Step 2
Add the apple and leek to the frying pan and cook for 2 minutes. Lightly brown and beginning to soften.
Step 3
Stir in the stock and mustard and bring to a simmer. Cook for 3 minutes or until leek is soft and the liquid has reduced by two thirds constantly stirring. Stir in the crème fraiche until melted and bubbling.
Step 4
Return the pork to the pan and warm through for a minute or two before serving
