Ingredients
4 servings
1 tablespoonextra virgin olive oil
1 teaspoononion powder
or 1/3 cup diced onion
1 tablespoongarlic
minced, from jar
2 bratsBeyond Sausage
sliced 1/4 inch thick, could quarter the slices too
kosher salt
15 ouncecan crushed tomatoes
fire-roasted preferred, juices included
15 ouncecan dark red kidney beans
juices included
15 ouncecan lentils
juices included
1 teaspooncelery salt
2 teaspoonssmoked paprika
¼ teaspooncumin
2 cupsinstant brown rice
Note I used 1 cup the first time - not enough
1 cupvegetable stock
broth
Instructions
Step 1
In a large nonstick skillet over medium to medium-high heat, sauté onion and garlic in oil for 3 minutes until soft.
Step 2
Add sliced brats and kosher salt. Sauté about 5 minutes.
Step 3
Add tomatoes, beans, lentils, celery salt, smoked paprika and cumin. Give it a good mix.
Step 4
Add dry rice and vegetable broth. Increase heat to medium-high. Bring to just about a boil, cover and reduce heat to medium-low. Simmer about 5 minutes or so until most of the liquid is absorbed.
Step 5
Remove from heat and let stand covered for about 5 minutes.
