Kale and quinoa salad
This salad is so delicious it is one of my favorites to make and to eat, it’s super easy perfect for meal prep just add your favorite protein next to it and you’ll have the perfect and healthy meal….
——ingredients——
—1 bunch of kale (stems off wash then chop and massage it with a little bit of olive oil and salt)
—1 cup of quinoa (cook according to the directions of the package)
—1 large tomato
—1 bell pepper (any color)
—1 small onion
—1/3 cup of pumpkin seeds
—1/3 cup pomegranate seeds

-1/3 cup of extra Virgin olive oil
-2 lemons (the juice)
-1 tablespoon of Apple cider vinegar
-1/2 teaspoon salt
-1/4 teaspoon of black pepper
