Seychellois Banana Ladob

Seychellois Banana Ladob is a warming, comforting and nourishing dessert made from plantain, coconut milk and spices. This lovely dessert is healthy and easy to make, not dissimilar from a baked or barbecued banana recipe- for those who have had. In Seychelles plantain is called banana, hence the name of this recipe!

notes:
- Plantain is readily available in Asian/African stores, and sometimes in bigger supermarkets in the UK. However, banana can be used as a substitute if you are unable to find plantain. If using banana, reduce the cooking time as detailed in step 5 and watch carefully so as not to overcook
- You can use 1tsp Vanilla bean paste instead of a vanilla pod
- For the nutmeg use 1/2 tsp ground nutmeg or 1/4 tsp freshly grated
Any uneaten Seychellois Banana Ladob will keep well in the fridge for about 5 days and can be reheated by microwave or in the oven at gas mark 4 / 180°C / 350°F for 10-15 minutes.

Instructions
Step 1
Peel the plantain by carefully cutting the top off and then running a knife down the length of the skin. Once peeled, carefully cut the plantain in half lenthwise so you have two long pieces
Step 2
Now cut each half lengthwise again to give 4 long pieces
Step 3
Arrange the pieces in a large saucepan with a heavy base and add all the spices
Step 4
Pour the coconut milk over the top and bring everything to a brisk boil.
Step 5
Cook for 10 minutes at this heat and then reduce to a low simmer and cook without covering the pan, for about 20 minutes more or until the plantains are completely tender and cooked to you liking If using bananas: Once the coconut milk comes to the boil, reduce the heat and simmer for 3-5 minutes. Turn down the heat and cook for a few more minutes if needed, until the bananas are warm and cooked through but not soggy. You can test how cooked they are by inserting a knife into the banana to feel how soft/firm it is. The cooking time will vary based on your pan size and how big the pieces are
Step 6
Remove the vanilla pod, cardamom pods and cinnamon sticks before serving. Enjoy!
