Spaghetti with Bacon & Oregano

If not oregano, basil works just as well. For more veg - diced carrot or celery go well. And up the heat with some fresh or dried chilli flakes.

Instructions
Step 1
Saute onion & celery until transparent, then add garlic & roughly chopped bacon & saute until bacon starts to brown.
Step 2
Add canned tomatoes and fresh, chopped oregano leave and a enough stock just to cover with liquid.
Step 3
Cook on low heat with cover on for approx 45 minutes, then remove cover & allow to reduce by about 1/4.
Step 4
Cook spaghetti and drain, reserving some liquid.
Step 5
Incorporate spaghetti with pasta sauce, use extra cooking fluid if necessary.
Step 6
Serve with parmesan & fresh oregano leaves.
