Instructions
Step 1
Cut onions into ¼" wide stips, 1-2" long
Step 2
In a Cast Iron or Stainless steel skillet, melt butter over medium heat
Step 3
Add onions, cook for ~20 minutes until onions are transparent and greatly reduced, stirring often. Do not let the onions brown on the skillet. When onions start to stick to pan, deglaze using water or sherry.
Step 4
After onions are reduced, add 2 bay leafs, kosher salt, pepper, garlic and dry thyme. Raise heat to medium high and continue cooking until onions darken and are carmelized. Continue stirring often, and deglazing as necessary. ~10 minutes, may take longer.
Step 5
Once onions are carmelized, add 1/2 cup sherry, bring to a boil, and simmer until sherry is gone.
Step 6
Sprinkle onions with four, and stir. Cook for 5-10 minutes on medium low heat to get rid of raw flour taste

Add 1/2 cup of beef stock, and deglaze skillet
Step 8
If your skillet is large enough, add remaining beef stock. Otherwise transfer the carmelized onions and stock to a pot, and add the remaining stock. Bring to a boil and simmer for 10 minutes, or until ready to serve.
Step 9
Remove bay leaves, season to taste with table salt, pepper and dry thyme. If stock was low sodium, you will require lots of salt to offset the sweetness of the carmelized onions. Add more flour for a thicker soup.

Preheat oven to broil

Cut a French baguette into 1" thick slices. Brush both sides with olive oil, and place on a baking sheet.
Step 12
Toast first side of baguette for 2-3 minutes, or until golden brown. Remove from oven, flip, and place a heap of grated cheese on top of baguette. Return to oven for 2-3 minutes, or until golden brown. (OPTIONAL - If broiling soup in broiler safe bowl, do not place the cheese on the baguette during this step)
Step 13
Serve soup into bowl, and while hot put ¼ cup of grated cheese into the soup. Place toasted baguettes and cheese on top. Allow a few minutes for cheese to melt, and serve. (OPTIONAL - Place soup, pre toasted baguette, and cheese into broiler safe bowl, and broil until cheese is browned)
