Instructions
Step 1
In a skillet over medium heat, cook turkey bacon until crispy. Set aside and let cool. Dice into small bite sized pieces.
Step 2
In the same skillet, add olive oil. Sauté onion and spinach until wilted.
Step 3
Preheat oven to 350F.
Step 4
In a medium sized bowl, add eggs and whisk.
Step 5
Add seasonings, mozzarella, milk, turkey bacon, onion and spinach. Stir until well combined.
Step 6
Distribute mixture over 12 greased muffin tins. Bake for 15-20 minutes. Let cool and enjoy!
