Meat Pie

1 poundground beef

0.5 poundground pork

2potatoes
diced and blanched

1onion
diced

4garlic cloves
minced

2carrots
diced

2celery
diced

1puff pastry

egg
beaten

1 Tbspsalt

1 Tbspblack pepper

1 Tbspthyme

2 tspnutmeg

1 Tbspcardamom

1 Tbsptumeric

1 Tbspground ginger

1 Tbsppaprika
Raspberry Sauce
Orange Soy Glaze
Instructions
Meat Pie
Step 1
Prepare the vegetables either with a knife or using a food processor

Step 2
Blanch the potatoes in a pot of boiling water for 3-5 minutes

Step 3
In a pan, brown the meat mixture on medium high heat. Does not need to be fully cooked through. (Cooking process will finish in oven)

Step 4
Take meat out and add the onions. Cook the onions until most of the moisture has evaporated
Step 5
Take onions out and add carrots & celery and saute for a few minutes
Step 6
Combine meat, onion mixture, celery, carrot, and potatoes into a bowl. Add all of the seasonings. Combine and set aside

Line a baking sheet with parchment paper

Cut the puff pastry into 6 even sections

Step 9
Place a hefty amount of the filling onto one side of the puff pastry section then fold over the other half. Press the edges down to create a seal then use a fork to crimp the edges

Brush each pie with an egg wash

Step 11
Bake for 15 minutes at 375 degrees Fahrenheit

Raspberry Sauce
Step 12
Add raspberries, sugar, and water into a saucepan

Step 13
Mash the raspberries and reduce on medium heat for 5 minutes

Strain into another saucepan and add the salt. Reduce for another 3 minutes then swirl in the butter until fully melted and emulsified


Orange Soy Glaze

Zest the orange before cutting it into portions
Step 16
In a saucepan, add water, orange zest, and the juice from oranges. Then add soy sauce and sugar and reduce on medium heat until thickened
Assembly

On a plate, schmear the orange soy glaze in the middle to create the base

Splatter the raspberry sauce all over the plate

Place a sliced meat pie on top
