Step 1
1. Preheat the oven to 375°F (190°C). Grease a 9x9 inch baking dish.

2. In a large skillet over medium-high heat, cook the breakfast sausage until browned and crumbled. Remove the sausage from the skillet and set aside.

3. In the same skillet, sauté the diced onion and red bell pepper until the onion is translucent and the pepper is tender.

4. In a large mixing bowl, whisk together the eggs, sour cream, dried oregano, salt, and pepper.

5. Add the frozen hash browns, cooked sausage, sautéed onions and red pepper, chopped sun-dried tomatoes, and shredded cheese to the mixing bowl. Mix well until all the ingredients are evenly combined.

6. Transfer the mixture to the prepared baking dish and spread it out evenly.

7. Bake for 30-35 minutes, or until the top is golden brown and the casserole is cooked through.

8. Let the casserole cool for a few minutes before slicing and serving. Enjoy!
