Step 1
1. Place a frying pan over a medium heat and
add a drizzle of olive oil. Once warm, add
the garlic, thyme and a pinch of salt. Cook for
a minute or so, then add the mushrooms and
give it all a good stir. Leave to cook for another
5 minutes until the mushrooms are golden
and tender.
2. Just before serving, add a good pinch of salt
and pepper and stir through the yoghurt and
lemon juice.
3. Divide between the slices of toast and serve
