Instructions

Step 1
Apart from the Vegetable Oil and the Apple Cider Vinegar, add the rest of the marinade ingredients to and blender and blend for approximately two minutes.
Step 2
Add in the vegetable oil and blend for a further two minutes or until it forms a paste.
Step 3
Transfer the paste into a bowl and add in the apple cider vinegar, salt and pepper and mix well.
Step 4
Prepare the rack of ribs by removing the membrane from the inside and as much fat as you can.
Step 5
Place the ribs onto a sheet of kitchen foil, ensuring there is enough foil to cover all of the ribs.
Step 6
Using your hands spread the marinade all over the ribs, making sure you spread it over both sides of the ribs and the edges.
Step 7
Once the ribs are coated in the marinade tightly cover the ribs in the foil.
Step 8
Place the foil-wrapped ribs onto a baking tray and place them in the oven for two to three hours at 180 degrees.
Step 9
Once cooked remove from the oven and carefully peel back the foil, take care as hot steam is likely to escape from the foil.
Step 10
Add the lemon juice and the honey to a bowl and mix until combined.
Step 11
Using a brush gently brush off the marinade, don’t brush too hard as the rib meat will be very tender and can easily be brushed away.
Step 12
Once the marinade has been removed brush the honey lemon mixture all over the ribs.
Step 13
Place the ribs under a hot grill for 5 minutes.
Step 14
Remove from the grill, garnish with some freshly chopped coriander and serve.
Step 15
Lick you’re lips and enjoy.
