Instructions
Step 1
Cut chicken breasts into butterfly and flatten out slightly.
Step 2
Marinade your chicken with the juice of 1 lime, 1 tbsp fish sauce, chopped fresh chilli, 1 tbsp desiccated coconut, garlic puree, some mashed fresh mango and 1 tbsp olive oil.
Step 3
Let it marinade for 15 minutes and bake in a hot oven.
Step 4
Salt the red cabbage, let it sit for 10 minutes then rinse and dry.
Step 5
Dress in 1 tbsp yoghurt, chopped fresh coriander, juice of 1 lime, salt and pepper.
Step 6
Make the dressing by mixing yoghurt, salt, 1/2 tsp curry powder, lime juice and 1 tsp honey.
