Easy Slow Pork Ribs

The recipe is so simple a child can follow and get professional quality results. No special skills or equipment are needed.
All you need is a rack of pork ribs, an oven, and aluminum foil. It doesn’t even matter how good your range is, as long as it keeps low temperatures. Pack seasoned ribs in foil and cook low (270-300F) and slow (~3 hours). Foil doesn't let any moisture escape keeping in all the juices and flavors of meat, bones, cartilage, and fat. The result is full of flavor and melts in your mouth!
Use the same method of cooking, but be creative with flavor variations. There are different dry rubs, marinades, and sauces. Vary fruits and vegetables under the rack of ribs. They can be as simple as sliced onions, carrots, and potatoes. Or, you can go with really complex combinations that include dry and smoked fruit, pickled and fermented vegetables, fresh herbs, and exotic spices.

Step 1
Preheat oven 300F. Cut heavy-duty aluminum foil twice longer than a rack of baby back ribs you are cooking.
Step 2

Slice onions. Squeeze cabbage to remove extra moisture. Heat 1 tbsp of oil in a skillet over high heat and saute onions and cabbage. Your goal is to evaporate some water and slightly caramelize vegetables.
Step 3

Place them along the centerline of one-half of the foil.
Step 4

Core and slice apples. Peel garlic cloves. Arrange equally distributed dry plums, garlic, and apple slices on top of the cabbage. Sprinkle with some thyme, pepper, and salt.
Step 5

Cover with baby back ribs rack.
Step 6

Season the ribs and place more apple slices on top.
Step 7

Cover with the second half of foil.
Step 8

Seal the foil and cook in the oven for 3 hours.
Step 9

In 3 hours, uncover the top of the rack, remove apples, brush with BBQ sauce and broil for 2 minutes before serving now.
Step 10
Let the rack cool to room temperature and refrigerate still wrapped into the foil to serve later.
Step 11
Portion cold ribs by cutting between two bones, place them on a baking sheet lined with wrinkled foil, brush with your favorite BBQ sauce, and broil to caramelize the top for 2-5 minutes before serving.
