Instructions
Step 1
Chop apples coarsely, and toss with lemon juice, sugar and cinnamon in a large bowl; set aside.
Step 2
2 Combine cream cheese and powdered sugar in a separate large bowl, and set aside.
Step 3
3 Heat 1 tablespoon butter in a large non-stick skillet over medium-high heat, and sauté apples and pecans about 5 minutes, or until apples are tender; remove from heat and stir into cream cheese mixture, then return skillet to heat.
Step 4
4 Melt 1 teaspoon butter in skillet, and place 1 tortilla in skillet; turn to coat both sides; heat tortilla 30-60 seconds, until tortilla is slightly crispy, then remove skillet from heat.
Step 5
5 Spoon 1/3 cup apple-cream cheese mixture down center of tortilla; fold tortilla in half to close.
Step 6
6 Serve quesadillas warm and drizzled with cajeta or caramel topping.
