Sfenj - Moroccan Doughnuts

Originating from North-West Africa, this vegan doughnut is eaten by Moroccan Jews, in December, celebrating the Jewish festival of Hanukkah. These taste best immediately after coming out of the pan.
The trick with this recipe is to be careful not to overknead the dough!

Step 1
Prepare dough: In the largest bowl available, mix together flour and yeast. Add sugar and salt and mix into the flour.
Step 2
Add half the amount of water and start kneading the dough for a minute, with open fingers and lifting movements of the dough from the bottom of the bowl to the front of the dough. Gradually add the rest of the water and continue kneading for another minute, and that's it. Do not knead this dough too much. The dough will be very runny and that's fine.
Step 3
Cover the surface of the bowl with plastic wrap and let it rise until it doubles in volume. (Approx 1.5hrs) Jab and mix the dough with your hands to remove the air a few times and then cover and let it rise again.
Step 4
Pour oil into a frying pan and heat. Dip your hands in a bowl with oil (or water) and grab a piece of dough the size of a tangerine. Pull upwards (the ball will pull all the dough with it) and pinch with the other hand (also oiled) to detach the ball from the dough. Make a hole in the ball with your fingers and stretch the edges to the sides, to get a thin circle shape, immediately place it into the hot oil. Repeat this until the pan is full.
Step 5
Fry each donut for about 2 minutes on each side until golden. Remove them from the oil to absorbent paper and immediately dip in a bowl with sugar or into a bowel with cinnamon sugar and coat both sides. Serve immediately.
