North African Cheese and Potato Patties- Maakouda

Maakouda is a type of North African potato patty that is popular in countries such as Algeria, Morocco and Tunisia. It is made from mashed potatoes that are flavored with spices paprika, cumin, garlic, and salt, then shaped into small patties and fried until crispy. Cheese is added in shredded form to the potato dough to add some creaminess and flavor. The patties are served as a side with a hearty soup like harira (recipe posted on my page). Its delicious flavor and crispy texture make it a popular choice for both adults and children.

Instructions

Step 1
Peel potatoes and cut them into large chunks.

Boil the potatoes in salted water until they are soft enough to break with a fork.

Strain potatoes from water and place them into a mixing bowl.
Step 4
Add 1 (or more) cup of shredded cheese or cheeses of choice (sharp cheddar, gouda, mozzarella, fontina, pepper jack, or monterey jack all go well), parmesan, cream cheese, garlic cloves crushed (or 1 teaspoon garlic powder), salt, pepper, turmeric and paprika and the finely chopped parsley (or cilantro whichever you prefer).
Step 5
Mix all ingredients well and allow mixture to cool a bit. Once cooled, mix in the eggs.
Step 6
Shape the dough into patties and set the shaped patties into refrigerator for at least 20 minutes to keep their shape.
Step 7
Heat cooking oil about 1/2 inch deep in a frying pan on medium/high heat (about 6 out of 10 heat). Test if oil is hot enough by doing the wooden spoon trick (the tip of a wooden spoon should form bubbles as soon as it touches the oil)
Step 8
While the oil is heating up whisk 2 eggs into a bowl. Then place 1 cup flour and panko breadcrumbs with salt and paprika in a separate bowl and dip the patties into the egg mix followed by the flour coating everywhere. Then place into oil to fry.
Step 9
Allow them to fry for about 5-6 minutes per side or until a golden brown color is formed on each side.
Step 10
Remove them from the oil and set aside to cool.
Step 11
Serve with a side of lemon wedges and garnish with parsley. Enjoy with a hearty soup as a side <3
