Preheat oven to 400

In a bowl, mix, butternut squash, red onion, melted, coconut oil, cinnamon, and salt. Turn into a baking sheet and roast for 30 minutes or until the squash is cooked through. Remove and let cool.
Step 3
Layer a salad, bowl with greens, mixture of squash, apple juice, and cooked eggs. Drizzled with olive oil and vinegar.
